Cypress announces spring 2012 Artisan Meat Share

Two-time James Beard Award-nominated chef Craig Deihl of Cypress is offering selections from his CSA-like concept, the Artisan Meat Share, just right for this year’s Memorial Day and Father’s Day celebrations.

The Memorial Day package will feature grill items, including smoked pork shoulder, bratwursts, hot dogs, burgers, barbeque sauce and sauerkraut for ten to twelve people. And for dads, there’s lots more in store than the yearly tie, with a package that features an assortment of Deihl’s charcuterie and cured meats, as well as an in-house, dry-aged steak for two.

The Artisan Meat Share features products that come from pasture-raised animals that are hormone- and antibiotic- free, and raised by those employing traditional farming methods and animal husbandry. Marc and Annie Filion, with Keegan-Filion Farm, have supplied whole Tamworth pigs for the past four years, and Gra Moore has provided guinea hogs and Ossabaw pork. When necessary, chef Deihl sources meat from producers outside of South Carolina that practice similar sustainable methods. These include Eden Natural, Niman Ranch, Painted Hills, Snake River Farms, Berkridge Kurobuta and Fudge Family Farms.

Orders will be available at Cypress (167 East Bay Street) for pick up in plenty of time for preparations beginning on Wednesday, May 23, for Memorial Day and Wednesday, June 13, for Father’s Day.
